Week 11

  • This week kid’s tasted tested Zestar apples from Sekapp Orchard (open 9am-7pm daily).
  • Tuesday morning kids harvested beets, beans, squash, cucumbers, kale, Swiss chard, eggplant, peppers, onions, ground cherry tomatoes and herbs.
  • Tuesday afternoon, Chef Nancy from Mayo performed a cooking demo for the kids. Kids tried fruit salad, seasoned beans and beets. They also go to see her make animal sculptures with some of the vegetables they harvested from the garden.
  • Thursday kids received their own cookbooks with all the recipes they created over the summer. They also made a quick and easy healthy snack: apple smiles.

Helpful Tip
Last week while making fruit kabobs, someone said, “…our taste buds change.” She was referring to someone who said they didn’t like cantaloupe and she was right. It can take over 12 exposures for kids to begin liking new foods, so keep on trying 

Galloping Good Eggplant (Serves 2)

Ingredients

  • ½ cup eggplant, diced
  • ½ cup fresh mushrooms, diced
  • ¾ cup fresh tomatoes, chopped
  • 3 seconds butter-flavored cooking oil spray
  • ¾ oz. fat-free mozzarella cheese (You can use a string cheese stick)

Directions

  1. Spray skillet with cooking oil.
  2. Sauté eggplant, mushrooms, and tomatoes in skillet until tender but cooked.
  3. Drain off extra juice and top with shredded or ‘peeled’ cheese. Let it melt.
